Is there a way to add an exception to an OS Policy applied to a WLAN, for example, deny iOS on this WLAN except one specified MAC of an iPad,

yes, it would be nice to have if this is something doable. i think its not possible to do so..

I was thinking about some precedence between L2 policy and OS Policy to combine them

I didn't see anything about this on the roadmap presented by presales, you have a commited firmware version about this ?
