I have my laptop connected to my Ruckus and when I do a speed test I can't break 100mbps and I am on a 200mbps line. If I use the modem Xfinity sent and connect to that 5G I get the 200mbps. Is this ruckus not capable of real 5G speeds or do I need to configure something?

Based on the screenshots, the output appears to be normal.
At this stage, I recommend creating a new WLAN/SSID and setting up a separate 5GHz network on your Unleashed Access Point and check speeds connecting to this new WLAN. This can help minimize wireless interference with the 2.4GHz band, which sometimes impacts speed performance.

I already created a new WLAN and just enabled 5GHz Same result.
