Separate VLAN for Chromebooks

I'm planning to setup a separate VLAN for our Chromebooks and rather than changing the configuration of all my site switches that are only using VLAN1 would I be okay to use Tunnel Mode on my Chromebook SSID to tunnel all WLAN traffic back to my ZoneDirector?  Our ZD3000 is in the District Office and we have 1GB fiber links to each site.  Each of our 9 schools has 600-900 Chromebooks.

We use this option for our Guest wireless, but it doesn't get that many users so I don't know if the tunneling is creating a bottleneck.

What services are you providing to the Chromebooks? Anything local or just internet access?

Only Internet access, nothing local.

Its fine to tunnel. Just remember that the tunnel will add to additional overhead. Depending on the technology linking sites (MPLS for example) you may need to play with the MTU size.
