Is there any limitation of number of users on ZD5000 when it have license for
100 AP ́s?

I need the solution for the scene when I have 60 AP (7762) for about 10000 users.

Any idea?

As of 9.7 release yes (see section 5.1.1 in the release notes). But earlier releases do still have tiered user counts based on licensing and so I should have clarified that above. The High Density Deployment library above I believe addresses your other questions.

So, If I configure non-authenticated and non-encryption wlan, Could I have more than 5000 users on ZD3000 with license under 250 AP ́s  ?

When Ruckus said the ZD1100 accepts up to 1250 clients, ZD3000 accepts up to 10000 clients, and ZD5000 accepts up to 20000 clients. Are those clients authenticated and unauthenticated?

That count is a systems limitation based on DPSK and un-related to the license count you may have installed.
