My 2 Ruckus 7341 Wireless AP showing different time and there's no way of manually configuring them.

What you can do is SSH to the AP and run this command

set ntp : set ntp {options}
-> server
-> update, synchronize time now
-- Set time server info

$ set ntp 0.pool.europe.ntp.org for example

and if needed

$ set ntp update

This is on code 9.7.1 but earlier is probably the same

I tried...

$set ntp server ntp.ruckuswireless.com

Returns...

Bad IP or Unable to resolve server name

So, I set manually changed the address of the NTP via web GUI. Then I tried...

$set ntp update

Returns...

OK

But, when I check on the web GUI, it still shows the wrong time. Wrong by about 2 months.

I posted other issue on the same AP and it may be due to outdated firmware. Will update and retry.
