So will all devices run the latest common supported firmware (200.7)? Or each will run their own latest version? I have a couple of R500s and found a R320 at a good price, so was wondering what will happen if I add it to the network.

You cannot run multiple versions of firmware in a single Unleashed network, all APs need to run the same version of firmware.

R320 will happily run 200.7. If you have an AP that has shipped with a newer version, then I'd recommend manually down-grading it prior to joining it to your Unleashed network.
Got it, so basically - the R500s will stay at 200.7 forever, as they are EoL, and the R320 will be at 200.7 too if I want to run them on the same network, and if I ever replace the R500s with something newer - I can upgrade the firmware.
